Chinchilla is acting really neurotic lately!!!?

My chin is almost a year and I've had him since he was a baby. He has been badly misbehaving lately. I have him in a really big bathroom and a HUGE cage. I let him out once or twice a day, to run around, for about 20-30 minutes each time. He has been in this area for a couple of months and nothing abnormal. Now anytime I go near his cage he starts running around all crazy (not because of me just because he wants out). If I have to open the door of his cage, for any reason, he will try to escape. He has been tipping over his little protein pellet dish and so I took that out. Now he rakes his regular food out of the side feeder into the bottom of the cage. I obviously cant take that out but it is SUCH a waste of food. I don't know why all of a sudden he is acting so out of control. I spend lots of time with him. I don't know what to do when he tries to escape when I open the door and to get him to stop tipping over his protein pellets. Is it because I let him out too often and he just wants out all the time now? Thank you!!!
